“I think the reputation of instant coffee has always been down to the low quality of the beans used to produce it,” says Fabio Ferriera, the co-founder of Notes Coffee. This small chain of coffee shops and bars in London has its own roastery, and has recently collaborated with US-based Voila instant coffee to start selling its single-origin instant coffee in Notes stores.
“The varieties used by the larger brands are low-grade commodity coffee, mostly robusta, which lacks flavour. Choosing aromatic arabica beans with high acidity on the palate is key to preserving all the good flavours of the coffee in its instant version,” Ferriera says.
